Have a 2000 Accord (EX) - engine type is F23A1 - V-Tech - 2.3L - 4CYL - There is a sensor located on top of the thermostad assembly. What is the function of this sensor and, does it trigger the temperature gauge on the dash board..?

welcome to the forum. according to the diagrams on hondaautomotiveparts.com, the sensor you are talking about is the thermal sensor that turns the fan on.
