Is it neccessary to take my 2007 Fit to a Honda Dealer for just and oil change if it is still under extended warranty. What happens to the maintenance minder when you service it at a non-Honda dealer

You can take the car to any non-Honda dealer to change oil, besure to use the oil that your dealer uses ( ask the service dept ) and use the honda filter. and make sure the oil & filter change is recorded on the owners manual. This makes it difficult for Honda to deny warranty if the engine blows up or is damaged.
Also the oil is changed approx 10 - 30% and the non-Honda dealer will change the maintenance minder if not, read your owners manual and it will show you how to do it.
